Cottage Cheese French Toast

What you need

1 cup powdered sugar

1 oz unsalted butter

6 slice white sandwich bread

1 banana

½ tsp ground cinnamon

1 tbsp vanilla extract

3 egg

¾ cup full-fat cottage cheese

1 tbsp maple syrup

1 bunch fresh fruit

1 pinch kosher salt
Instructions
0 Place a cooling rack inside a baking sheet. Set aside. 1 Add the cottage cheese, eggs, maple syrup, vanilla, cinnamon, and salt to a blender. Blend until smooth, about 30 seconds. Pour into an 8x8” or 9x9” baking dish. 2 Add as many slices of bread as will fit in a single layer. Soak, flipping once, until drenched but not falling apart, about 30 seconds. Transfer to the wire cooling rack (letting excess custard drip into the baking sheet). Repeat with remaining bread. 3 Melt about 1/2 tablespoon butter in a large nonstick skillet over medium heat. When it’s sizzling but not brown, add as many pieces of bread as will fit. Cook, flipping once, until both sides are crisp and golden-brown, 2 to 3 minutes per side. Repeat with more butter and remaining bread. 4 Dust with powdered sugar, if using, and drizzle with a generous amount of maple syrup. Serve with fresh berries or sliced bananas!View original recipe
